Cookies - Oatmeal Raisin, Flax Gel, Peanut Butter, Carob Chip

Oatmeal Raisin Cookies
3/4 cup soy margarine
1 cup honey
2 tsp maple flavor
½ cup flax gel (see recipe below)
2 tsp salt
1 Tbsp. coriander
½ cup coconut
1 cup walnuts
1 cup raisins
3 ½ cups quick oats
1 cup white flour or whole wheat pastry flour
Instructions: Cream together the honey and margarine. Add the next seven and mix
them in. Add the last two and mix until no flour streaks appear. Drop 1/3 cup siz portions
onto a oiled cookie sheet. Flatten with a knife into a cookie size disk and bake at 325 F
for 20 min.
Flax Gel
Pour 2 cups of water into a medium size pot. Add ¼ cup flax seed and bring the water to
a boil. Turn down the heat to low and simmer for 10 min. Remove from the stove and
strain the seeds off saving the liquid. Store it in a container in the fridge up to two
weeks.
Peanut Butter Cookies
1 cup soy margarine

1 cup sugar cane
1 cup honey or other liquid sweetener
1/2 cup flax gel
2 tsp. molasses
2 tsp. vanilla
1 tsp. maple flavoring
2 cups peanut butter
4 cups
unbleached white flour
2 tsp baking powder
2 tsp. salt
Instructions: Cream together the margarine, sugar, and honey, add the next four and
mix them in. Add the last three and mix until no flour streaks appear. Drop 1/4 cup size
portions onto an oiled cookie sheet. Flatten slightly by hand and then mark the top with
a fork or potato masher and bake at 325 F for 20 min
Carob Chip Cookies
3/4 cup margarine
1 cup sugar
1/3 cup soymilk
2 tsp vanilla
1 tsp maple flavor
1 cup carob chips
1 cup walnuts
1 tsp salt
2 cups flour
1 T baking powder
Wisk together the margarine and sugar. Add the vanilla. In a separate bowl combine the flour, salt, carob chips, walnuts, and baking powder. Cut the margarine and sugar into the flour mixture. Add the milk and mix until it forms a soft dough. Use a small ice cream scoop to drop the dough onto a oiled cookie sheet. Flatten with a knife. Bake at 350ËšF for 15 minutes.
Peanut Butter Cookies
1 cup soy oil
1 Tbsp. lecithin
1 cup water
2 cups Florida crystals
2 tsp molasses
2 tsp vanilla
1 tsp maple flavoring
2 cups peanut butter
4 cups white flour
2 tsp salt
Instructions: Whisk together the first three ingredients forming a thick pale yellow liquid similar to melted butter, add the next five and mix them in. Add the last two and mix until no flour streaks appear. Drop 1/4 cup size portions onto an oiled cookie sheet. Flatten slightly by hand and then mark the top with a fork or potato masher and bake at 325 F for 20 min
