Crackers - Coconut Crispies

1 cup coconut, unsweetened

½ tsp salt

½ cup whole wheat flour

½ cup white flour

¼ cup honey

¼ cup oil

¼ tsp lecithin

1 tsp vanilla

 

Place all the ingredients into a bowl and mix well rubbing the mixture with your hands until it is crumbly. Add enough water a little a time to form a ball of dough (1/2 cup approx.) Place the dough onto a piece of plastic and roll it out thin. Transfer it to a cookie sheet score it and bake at 325ËšF till brown. About 20 min.
