Dips - Hummus, Cashew Cheesy Dip, Nacho Style Cheese Sauce, Apricot Whip, Cream Cheese Dip, "Cheese" Spread

Hummus

 

2 cups chick peas, (garbanzos) soaked and cooked or canned, drained and rinsed.

3 cloves of garlic, minced

3 T lemon juice

2 T olive oil

2 T water

3 T tahini

½ to 1 tsp cumin

½ tsp paprika

Place all the ingredients into a food processor and processor until a thick paste forms.

Serve warm or cold.

 

 

Cashew Cheesy Dip

 

2 cups cashew nuts

¼ cup cornstarch

2 ½ cups cold water

2 T Tahini

2 T lemon juice

2 T yeast flakes

1 T salt

1 tsp onion powder

½ tsp garlic powder

 

¼ cup pimentos – optional for color

 

Add-ins:

Chili peppers

Olives

Fresh herbs

Meat substitutes

 

Place all the ingredients into the blender. Blend on high until very smooth. Heat in a sauce pan on medium  heat stirring constantly till thick. Chill and then mix in add-ins of your choice.

 

 

Nacho Style Cheese Sauce

 

2 cups water

1/3 cup white flour

2 Tb. cornstarch

¼ cup pimentos

1/3 cup vegetable oil

¼ cup yeast flakes

2 tsp onion powder

½ tsp garlic powder

1 Tb. lemon juice

 

Place all the ingredients into a blender and blend on high till smooth. Pour the mixture into a sauce pan and heat on medium-high till thick. Serve hot.

 

 

Apricot Whip

[Yield 2 quarts]

 

2 cartons Silken Tofu

½ cup honey or other sweetener

¼ tsp salt

1 tsp vanilla

1 cup dried sulphured apricots soaked in hot water till soft

1/2 cup oil

Place all the ingredients into a blender and blend until smooth, thick creamy and smooth. Repeat recipe!

 

 

Cream Cheese Dip

 

2 cartons  of Toffutti Cream Cheese

¼ cup honey, maple syrup, or cane sugar

1 Tb. vanilla

1 tsp. fruit flavoring of choice

¼ cup fresh fruit or berries of choice

touch of lemon juice

 

Place all the ingredients into a food processor and blend till incorporated. 

 

 

 

 

“Cheese” Spread

 

1 cup water

2 T. sesame seeds

1 tsp. salt

1/4 cup nutritional yeast flakes

1/2 cup diced pimentos

1/4 cup lemon juice

1/3 cup (heaping) cashew pieces

1/3 cup (heaping) sunflower seeds

1 tsp. garlic powder

1 tsp. onion powder

1/4 tsp. dill weed

1/4 cup arrowroot powder

1 tsp. hickory smoke flavor

 

Blend all ingredients together in a blender until smooth. Transfer cheese sauce from blender to a saucepan. Cook, stirring constantly, until stick. Make “cheese” sandwich with whole grain bread. May add soy mayonnaise and sliced tomato.
