Pancakes

              Ingredients:

 

  • 1 c. whole wheat pastry flour

  • 1 c. unbleached flour

  • 1/4 cup soy supreme powder or milk powder

  • 2 tsp. baking powders

  • 2 tsp. vanilla extract

  • 1 tsp. maple flavor

  • 1 tsp. salt

  • 2 Tbsp. oil

  • 2 Tbsp. sucanat

  • 2 1/2 c. milk

 

 

         Instructions:

 

  • Place all the dry ingredients together in a bowl and mix well.

  • Place the wet ingredients together in the middle of the dry and whisk together.

  • Heat a non-stick skillet and place a 1/4 cup size scoop of batter in the middle.

  • Cook till the top has a bunch of bubbles on it and looks slightly cooked.

  • Flip the pancake over and cook till browned on both sides.

  • Remove and cool. Repeat.

 

This recipe can also be prepared ahead of time as a dry mix. Don’t add the oil or milk. The dry mix is nice to take camping. Just add oil and milk or water when you are ready to prepare the pancakes.
