Salads - Potato Salad, Soy Mayonnaise, Salad Dressings

Potato Salad

 

4 large potatoes

3 large carrots

1 1/2 cups frozen peas

3/4 cup diced pickles

1/2 can slice black olives

1 recipe mayonnaise

Place the potatoes and carrots in a large pot and cover with water add 1 T salt and boil

till they are soft. Drain the water off and let them cool till you can work with them. Peel

the potatoes and carrote and cut into cubes 1/4-1/2" in size. Place them in a large bowl.

Place the frozen peas into a pot of boiling water and boil for 5 min. turn the heat off and

let them sit for a another five minutes before draining the water off. Add the peas to the

potatoes and carrots along with the pickles and olives. Add the mayonnaise and mix

well. Store in the Refrigerator.

 

 

Soy Mayonnaise

 

1 carton silken tofu

1/2 cup soy milk

2 tsp salt

1 T onion powder

1 tsp garlic

2 T yeast flakes

1/4 cup honey

 

1 - 2 cups oil

1/4 cup lemon juice

Place the first section of ingredients into the blender and blend till smooth. While the

blender is running slowly pour the oil into the blender until the hole in the middle of the

spinning mixture closes up. Turn off the blender. Add the lemon juice and pulse the

blender to mix it in.

 

 

Salad Dressings

 

Salad dressing is a homogenization of oil and water. Spices and seasonings and fresh

vegetables or fruits are added to give the color flavor and sweet, tangy, savory flavor to

accent the vegetables. Cream dressings have a protein added in the form of some milk

product. The following recipes are good vegan versions of some popular flavors. For a

lower fat version cut the oil down to 1/3 the total amount and replace it with water. Use

some instant clear gel to thicken it.  

 

French Dressing:

- rich red tomato dressing

1 cup vegetable oil

1/3 cup lemon juice

1/3 cup honey

1 Tb. paprika

3/4 cup tomato puree

1 Tb. onion powder

1/2 tsp garlic powder

1 1/2 tsp. salt

Place all the ingredients into a blender and blend on high till smooth. CHill and serve.

 

Sauce Rouge:

- savory orange colored dressing

1 cup tomatoes diced

2/3 cup olive oil

2/3 cup vegetable oil

1 1/2 Tb. yeast flakes

2 tsp salt

2 cloves garlic

1/2 tsp marjoram

Place all the ingredients together into a blender and blend on high till smooth. Chill and

serve.

 

Ranch Dressing

2 cups soy mayonnaise

1 1/2 Tb. yeast flakes

2 tsp. parsley flakes

1 Tb chives

1 tsp dill weed

Place all the ingredients in a bowl and mix together. Chill and serve.Soups, Salads, Sandwiches

 

Italian Salad Dressing (Jenny & Remo)

 

2 cups Olive oil

1 cup Lemon juice

2 Fresh cloves garlic

1/4 cup Honey

2 T Fresh basil

2 tsp Paprika

2 Tb. Soya sauce / Bragg liquid aminos

2 Tb. Chicken style seasoning

1 tsp Oregano

2 Tb. Yeast flakes

 

Vary the amount according to your preference 

 

Add all ingredients together into blender and blend it one minute
