Soups - Creamy, Tomato, Vegetable Broth, Colavy 

Preparation:

Select, wash and cut the vegetables to be used in the soup. Gather the seasonings and

remaining elements of the recipe. Begin by sauteing that onions and garlic in the bottom

of heavy soup pot with the oil and veggie meat if you are using any. Add the water or

broth and vegetables and dry herbs and simmer till the vegetables are soft. Add the

fresh herbs and garnish just before serving.

 

 

Cream Soups

 

Cream: Add this just prior to serving and heat gently

1 1/2 cups raw cashews

2 cups soup broth

Rinse the cashews in a strainer and place them into a blender. Add the broth and blend

till smooth.

Soup Base:

1 onion diced

2 Tb. vegetable oil

2 cups Veggie Meat pieces (optional)

2 qts of chopped Vegetables

2 qts Water

2 Tb. Chicken Style Seasoning

1 Tb. Onion Powder

2 tsp. Garlic Powder

2 tsp Salt

Vegetables & Seasonings:

Potatoes, 1/2 tsp. cumin, 1 Tb. parsley,

Squash, 1 tsp. coriander, 1/2 tsp. ginger, 2 Tb. honey, 1/2 tsp. rosemary

Broccoli or Mixed Vegetables, 1 Tb. yeast flakes, 1 Tb. basil, 1/2 tsp celery seed

 

 

Tomato Soups

 

Soup Base:

1 med onion chopped fine

1 large clove garlic crushed

1 large can V8 juice

1 can tomato chunks

2 tsp. basil

1/2 tsp cumin

1 T chicken style seasoning

1 T yeast flakes

 

1 T paprika

2 T liquid aminos

3-4 T honey

Vegetables or Beans

 

Vegetable Tomato-  4 cups mixed vegetables

 

Mexican Soup -  ½ can olives sliced, 1 can black beans, 1 can pinto beans, 1 can kidney beans, 2 cups corn

 

Chili- 1 quart pinto or kidney beans, 1 cup diced sweet peppers, 2 Tb. paprika, 1 tsp  cumin, 1/2 cup tomato paste, 1 cup veggie burger crumbles

 

 

Vegetable Broth Soups

 

Soup Broth:

2 T olive oil

2 garlic cloves

1 cup chopped onion

5 cups water

1 medium onion whole

2 stalks whole celery

1 whole carrot

Simmer for 30 minutes then remove whole vegetables

 

 

Colavy Soup

 

2 cups cubed potatoes

2 cups fresh or frozen kale or collards chopped

1 ¾ tsp salt

¼ tsp cumin

2 T nutritional yeast flakes

3 cups cooked navy beans

Add the potatoes to the broth and simmer till soft add the rest of the ingredients cook

five minutes more and serve
